      hello theshogun,
I’m not sure much about this area of gluten free products. I’m sure its very possible to match the flavour.
Gluten plays such an important role in the making of bread products that contributes to its taste and texture. This is called the “gluten network” its due to this that gives the bread its fluffiness. when using alternatives this gluten network cannot be made and there you end up with a stodgy lump.

Do you have to eat gluten free bread? I work with another scientist who specialises in baking technology. I’ll get some answers of him and let you know a proper answer! 🙂
